Mini Caprese towers

The easiest snack you’ll ever make are mini caprese towers. Until I hear differently, I invented these. Just slice up some tiny tomatoes and basil (mine are fresh from my garden. Even if you don’t have a green thumb, these are the two easiest to grow plants ever!), toss them with olive oil, salt, pepper, and herbs, and stack them with a slice of string cheese. You could stick a toothpick in each and voila, you have appetizers! Or assemble like the picture, serve on a bed of greens, and you have a salad. Each one is the size of a Smurf’s hamburger. So cute, inexpensive, and yummy!
